Centennial College Culinary Arts Centre

The design team was asked to renovate a conference facility in a former Howard Johnson’s Hotel to establish a new 7,600 square foot Culinary Arts Centre for Centennial College in Toronto. The client aimed to create state-of-the-art facilities in order to attract and retain the best staff and students, and to establish Centennial as Canada’s top school for aspiring chefs. Completed in 2013, this $3.5 million renovation dramatically opens and transforms the 1970’s building with professional-style kitchens in which students can confidently gain hands-on experience in culinary environments akin to those found in the world’s best hospitality venues.

In the highly competitive business of culinary arts education, programs must offer students the latest in technology and design. Centennial’s facility introduces a new interactive teaching platform that allows culinary students to both observe and practice in real time. It also incorporates state-of-the art culinary labs including an all-purpose lab, bake lab and multicultural lab for international cuisine. Student chefs are trained in preparing foods from Europe, the Mediterranean, the Middle East, South Asia and the Americas to meet market demand.

Teaching spaces are differentiated by colour and branded with iconic super-graphics to indicate their unique operation. In the kitchen labs, hard, impervious surfaces—stainless steel and bright, washable ceramic tile and hygienic wall surfaces—were required to allow meticulous cleanliness. Culinary labs are designed to be spacious and well-lit to ensure the safety of all users working in what is a busy and creative environment. Student workstations are well equipped with individual fridges, integrated storage, cutting boards and recipe holders.

Robust materials and details, including seamless safety flooring with integral coves and custom stainless steel counters, cabinets and shelves, will extend material life cycles and ensure that this heavily-used facility will stand the test of time. Sustainable materials and efficient mechanical and electrical services were specified throughout.
